Head Chef, Carlo Calautti

For over 25 years, our head chef, Carlo Calautti, has been perfecting his craft in the culinary arts.

Carlo’s love of food comes from his family roots, deeply embedded in Calabria, the southern region of Italy, which is famous for its robust cuisine and focus on high-quality ingredients.

Having had the privilege to work with some of the finest chefs in Italy, Carlo draws inspiration from the richness of Calabria and his ancestors. His style of cooking aims to revive the traditional and authentic ways of Italian cooking methods and flavours.

With a drive for constant learning and pushing the boundaries, Carlo takes no shortcuts which is evident in his constantly evolving menu.
